View Full Version : Salmon
Now this is a sort of multi-purpose thread, not solely for cooks, or fishermen or pedants - I would like a mix of posters here please?
Firstly is the plural of salmon salmon or salmons?? Or is it ambidextrous and can both with and without be used?
Secondly, will someone please help me - I am cooking a salmon or multiple of such fish for 50 people and I thought 9lbs might not be enough - any ideas??
And thirdly I have not got a fish kettle, although I can borrow one - but looking at the size of Andrea's 5lb Bass [in 'what are you doing now' thread] a 9lb salmon would not fit, either the kettle or the oven.
So fourthly - a friend, has advised I cook it in the dishwasher. So now next question [and I know you ask me for cooking advice - but I am turning the tables] do you know anyone or, indeed have you ever cooked a salmon in the dishwasher??
I can help you on the first one - the plural of salmon is salmon!

n. pl. salmon or salmˇons
Either are acceptable, although I would advise that a number of salmon swimming together in their natural habitat would be salmon, whilst several individual (and presumably dead) salmon when arranged together on a kitchen unit could be known as salmons.
Salmon, to me, is the more usual.
Groucho 24-05-2005, 07:32 PM Firstly is the plural of salmon salmon or salmons??
Salmon.

2 oz each (if I've worked it out right) doesn't sound like very much.
So fourthly - a friend, has advised I cook it in the dishwasher. So now next question [and I know you ask me for cooking advice - but I am turning the tables] do you know anyone or, indeed have you ever cooked a salmon in the dishwasher??
It works fine, just wrap it up very well in foil, dont put a dishwasher tablet in there and rinse it well before you use the dishwasher again.

Shouldn't that be either is acceptable as it really means either one :bag:
As for cooking in a dishwasher - never heard of it - do tell how it's done.
Still even if it didn't cook it would be lovely and clean
Critique 24-05-2005, 07:41 PM Oops! just seen Groucho's post. So you really can cook in a dishwasher then. Well I never knew that. What cycle, full wash or economy and with or without dryer?
Bella 24-05-2005, 07:44 PM Cooking in a dishwasher - whatever next! Flip I am sure we got a 1lb salmon for 17 people at Christmas, it was a starter and let me tell you there wasn't much left!
Groucho 24-05-2005, 07:46 PM Oops! just seen Groucho's post. So you really can cook in a dishwasher then. Well I never knew that. What cycle, full wash or economy and with or without dryer?
A medium cycle with dryer should do the trick.
It's only poaching it. Nothing clever Crit.
Thank you oh pedants - I am so pleased you can say salmons - cos when I try to say how many salmon will I need - I just automatically just say salmons. So thank you English language [and pendants] for making me out to be only a teeny weeny foolish person as oppossed to a large foolish person.
Groucho - you are a star and scholar - or is that a gentleman and a scholar??
Well either will do! :smartie:
My long cycle takes 1 hr and 10 mins [ish] will that be enough for a biggun - do you think??
Patsy 24-05-2005, 07:55 PM Is it for a buffet? Mr P reckons 2 10lb ish salmon Flip. It's his job, ma'am.
Fee For All 24-05-2005, 08:02 PM Salmon.
And I always do mine in the dishwasher. Put some lemon wedges and dill in the body cavity and lightly grease the foil to prevent it sticking. The heavy duty foil is best as well. I usually do two layers and do it in a sort of pouch. before you close it completely, bung in a generous slug of white wine.
You can also use this method to cook the salmon(s) in the oven.
I'd allow 3 to 5oz per person, depending on whether or not it's part of a buffet, or the main course. And don't forget to allow for the weight of the head, bones etc which are fairly hefty on a salmon! So, as Groucho says, the 9lber sounds a bit on the light side - you might be better with two.
Andrea 24-05-2005, 09:11 PM I have a little confession to make. Apparently the sea bass wasn't 5lb it was more near 9lb, oops:blush:
My hubby says that salmon can grow really big, 10-15lb.
And as for cooking it, go with what Fee says above.
My mum was having her 60th birthday party and a guy came round and cooked a salmon in the oven by just wrapping it in tin foil, wedges of lemon, some herbs and a good slug of wine (yes Flip, with the fish not in your glass) and it was delish.
I have never heard of anyone cooking anything, let alone a salmon in a dishwasher. I know I don't watch many cookery progs, but I've never seen Jamie Oliver shove anything into the dishwasher - to cook or to clean. That's a new one on me.

Open up the tin foil and check if it's cooked as soon as the cycle is finished - if it's not, leave it to steam away merrily!
Thnaks guys - this is a weight off my mind. I have never done a whole salmon as big as this before. I have done a whole trout in the oven before but just a tiddly one.
And Andrea - I was giggling this morning whilst telling Mr F about you and your large Bass!! It was particularly funny!:photo:
Here is the baby:

I put a pot of marmite beside to gauge the actual size of it! It is BIG!!
This is me wrestling with it:

It did request a ciggie - and being an animal lover how could I refuse - before death by guillotine!!??

Truth be known - I had already beheaded it!!
Gelastic 27-05-2005, 12:57 PM Better late than never I reckon!
Me an Mini G are vegetarian, but Mr G loves salmon. I'm going to ask him if he's ever cooked it in a dishwasher.
And finally - you can see how big it really is on this one:
http://img.photobucket.com/albums/v141/showey/r0300436.jpg
Oh and btw - I am not wearing a hideously old fashioned skirt!!! It is my pinny! Can you see how shiny I am - it was all the wrestling you know?? :bag:
Ceridwen 27-05-2005, 01:16 PM Can I ask a really divvy question - I can see how the steam from the dishwasher cooks the fish, but:
Do you put the fish in the top rack or bottom?
How do you avoid the fish getting wet when the wash programme is on - do you just rely on the foil protecting it?

In answer to your question, I would have put it on the top rack, and triple wrapped it in extra tough foil, stuffed tasty stuff into its belly [lemon, butter, tarragon or dill and some white wine].
But Ceri I have bottled it!!
A friend brought her ancient fish kettle over yesterday and as she does this loads told me the perfect way to cook them.
Bring the kettle to a good boil, put the salmon in, bring back to the boil and boil for 2 minutes only then take the kettle off the heat and leave for 24 hours in the water.
But regardless of how I cooked him - he was going to be beheaded and be-tailed [sp?] he was just too big for either the kettle or the dishwasher [even on a diagonal]!!

Cat, you've started smoking again!

well it does depend on the size of the marmite jar Flip ... some of them are really titchy, this could be one of those ... or it could be giant sized one! whichever could you send it my way cos I've nearly ran out!
Andrea 27-05-2005, 11:48 PM http://img.photobucket.com/albums/v141/showey/r0300436.jpg
Wow, Flip, you've got a big 'un there:w00t:
Is that your kitchen? cause it looks fab.
And I love your pinny.
And here is the finished product, isn't that a smartiepants??
http://img.photobucket.com/albums/v141/showey/r0300437.jpg
It [the salmon], and 23lbs of gammon, all went last night - everyone noshed into it and there was not a scrap of anything left. Which makes me think that I didn't do enough - although they were all quite big portions!

Why thank you Andrea!
When I went to pick it up, this little person struggled through with this fish
and said to me 'It is 29 pounds'
and I shrieked 'no way that is far too big - I only ordered a 13 lb one!!!'.
At which point she laughed
and said 'no this is 11 lbs and it costs 29 pounds'
I then let out a dubious and gently laugh - 'Oh' I said, 'but it is piggin enourmous'!!!
Anyway it was only just over 11 lbs in weight!! and thank you that is my kitchen, but I am ready for a change as soon as I have some pennies - I want to change the doors - but that is another thread one day!!
And the Pinny - it is my Grannies hand me down pinny and it is terribly old fashioned, made in about 1940 it is just great!!
Andrea 29-05-2005, 03:02 PM Flip, the salmon looks lovely.
I absolutely adore salmon and would love one of those on my plate for tea.
Well done you:thumbsup:
Bonsai 30-05-2005, 11:08 AM Flippy, your picture of the salmon with a fag hanging out of its mouth had me in fits of laughter. I even called Mr.B in from the bathroom to take a look and he thought it was fab too. Well done for feeding so many people .... and did we ever find out why you were feeding so many people ?
I love salmon too - although i have only ever bought the fillets. I wouldnt know how to cook on that size. I wouldnt of thought any fish kettle would be large enough !!!
I wouldnt know how to cook on that size. I wouldnt of thought any fish kettle would be large enough !!!
Glad to make you and Mr B larf Bonnie!!
And as far as fish kettles go - I borrowed an ancient one from a firend who is used to cooking for large parties - it actually belonged to her grandmother. But as far as I can gather more modern ones are a little narrower than the one I cooked that beast in, and probably unable to contain the size that I did, even cut up body, head and tail.
But anyway I cut the tail and head off! Brought a full kettle to a really good boil, plopped in an onion, peppercorns, bayleaf and some dill - then put the body of the fish in, followed by the head and the tail. Brought it back up to the boil - and boiled vigourously for 2 minutes only! Removed from the heat and left to cool for 24 hours.
Bonnie - I would definitely do it again and again the fish was as moist as moist can be ... oh and I was catering for a neighbours [well next village neighbour] 60th party.
Bella 30-05-2005, 07:39 PM Well done, you Flip! Love the piccies, they are really funny! I am sure there was enough, it was probably cos it was soooooo good that there wasn't any left!
